The grill that unites (and divides) the Balkans
Cevapi are small, finger-shaped grilled sausages made from a blend of minced meats — typically beef and lamb, sometimes pork depending on the region. They're served in a flatbread called somun or lepinja, with raw onions, kajmak (a creamy dairy spread), and sometimes ajvar.
They're the Balkans' answer to the hot dog, the taco, and the kebab rolled into one. Except they came first, and they're better. (Don't @ us.)
The great cevapi debate
Sarajevo cevapi are smaller, made with two types of meat, and served in a round somun. Belgrade cevapi are bigger, made with three meats, and served in a longer flatbread. Skopje has its own version. Zagreb too. Each city will tell you theirs are the originals. Nobody is wrong. Nobody is right. This is the Balkans.
